Residents near Polaris Parkway now have a temporary dining option that combines handmade Italian pasta with global street food influences. The new eatery, Flour & Fetty’s, occupies the space previously used by Flour Modern Pasta Bar at 1540 Polaris Parkway.
The partnership brings together Chef Yash Kishinchand of Flour Modern Pasta Bar and Rooh, and Chef Damian Ettish of Fetty’s Street Food Truck. They have merged their distinct culinary styles to create a menu featuring Italian global street food dishes. Specific items on the board include Miso Cacio E Pepe, Short Rib Pappardelle, and an appetizer called Shrimp Bao.
The collaboration runs from mid-October 2026 through the end of January 2027. During this period, Flour’s signature handmade noodles are paired with Southeast Asian, Thai, and South African flavors. The chefs designed the menu to represent both of their existing restaurants while celebrating the new joint concept.
The venue also offers a low-cost cocktail menu priced at $9 per drink. These beverages mirror the fusion approach used in the food, blending the same international and Italian elements. The restaurant is currently open Wednesday through Sunday evenings from 4:30 to 8:30 p.m.
The team plans to expand weekday hours as the concept develops. This limited-time pop-up serves as a test for the combined menu before any potential permanent changes. Customers can visit the location at 1540 Polaris Parkway during the stated hours.
